ADDITIVE FREE PORK 
 
We specialise in making very high quality sausages. It is not uncommon for us to sell between 40 Kgs and 50 Kgs of our sausages at a Farmers Market. The meat content of the sausages are between 82 to 85 percent. A selection of the more popular sausages that we make are: Plain, Cumberland, Sage, Sage and Onion, Old English, Chilli & Garlic, Curry & Garlic. We can make a batch to order.

We cannot keep up with demand for our Dry Cured Back Bacon. It really is a case of when it's gone, it's gone. Streaky Bacon is a good seller as well, indeed we prefere the taste and texture of Streaky Bacon. Occassionally we make Collar Bacon, this is made with Shoulder of pork and it retains the sweet taste that Shoulder of Pork is renowned for. We also dry cure gammons. 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
David has always invested in high quality animals and given the welfare of the animals very high priority. The evidence is in all the championships he has won over the years. We can guarantee that our pork is sweet and tender and the rind crackles up nicely when roasted. Some customers purchase whole de boned rolls of pork. 
 
I offer a butchery service at Farmers Markets. As much or as little as the customer wishes to purchase.   

 

NATURAL LAMB

 

Erica's lamb is tender, sweet and has a beautiful rich taste.

 

David always prepares for bed, putting on his jim jams before eating Erica's lamb for supper. Why, because he knows that with in the hour he will be in bed snoring!! The lamb really is that good.

 

David has developed a lamb & Mint sausage, using Erica's quality lamb, that is quite unique in flavour & texture. The same seasonings are used to make lamb burgers, they are a winner for the summer BBQ.

 

David is currently developing a Lamb & Curry sausage, using Erica's quality lamb. There is an increasing demand for this type of speciality sausage.

 

As with pork, if a customer wants a particular flavour of sausage or burger, we will endevour to supply.
